Chicken lettuce wraps with tzatziki sauce

 

Tzatziki Sauce Ingredients: 

  • 2/3 cup  Fat Free Plain Yogurt
  • 1/2 cup  Cucumber Diced
  • 3/4 tsp White Vinegar
  • 1/2 Tbsp Minced Garlic, Fresh
  • 1 tsp Dill, Fresh, Chopped
  • 1 tsp Mint, Fresh, Chopped
  • 1/3 tsp Olive Oil
  • Pinch of Salt

Method: (Prep time less than 1 min)

  1. Mix all ingredients together for Tzatziki Sauce. Chill the sauce.

 

Grilled Chicken and Lettuce Wrap Ingredients: 

 

 

 

 

 

  • 1 Pound Chicken Breast, Boneless, Skinless
  • 1 1/2 tsp Canola Oil
  • 1/4 tsp Salt
  • 3/4 Black Pepper, Ground
  • 1 Tbsp Lemon Juice, Fresh
  • 1 Cup Tzatziki Sauce (from above)
  • 12 Leaves, Boston Bibb Lettuce
  • 1/2 oz Dill Weed, Fresh or Coriander leaves chopped (optional)

Method: (Prep time less than 15 min)

  1. Toss chicken breasts in all the ingredients above except for Lettuce and Tzatziki Sauce and grill the chicken until cooked (internal temperature 170 F degrees).
  2. Chill the chicken and dice into small cubes.
  3. Mix chicken, tzatziki sauce , pinch of salt and pepper.
  4. Fill each lettuce leaf with 1/4 cup of above chicken and tzatziki sauce mixture.
  5. Garnish with coriander leaves or dill weeds.
  6. Serve and Enjoy!
